What else is freshly served? Merluza (hake), Mero (halibut), Lenguado (sea-tongue), Caballa (mackerel), Atun (tuna), Calamari (cuttlefish) or you order a Zarzuela de pescado (different fish plates), prepared in wine or sauce. In addition one drinks the best white wine, which comes mostly from the mainland and in addition, canarian wines are very good, particularly of Lanzarote and El Hierro. White wine is called: Vino blanco; Red wine Vino tinto; Dry is called seco; half dry semi seco. Who do not like a whole bottle orders Vino de la casa, the house wine, which is served in the glass, in the jug or in a bottle, which the landlord takes back again. Served to the meal are often small potatoes, plum-like salty bowled, which one eats along. They are called papas arrugadas, in seawater cooked jacked potatoes. In addition the typical Mojo is eaten; a sauce from rough salt, carnations, Paprika, garlic and oil. The sharp version is called Mojo picon and in addition one takes instead of the Chili. The exotic fruits of the islands form the basis for excellent Desserts and sweet foods. To each good meal a further speciality belongs to the canarian Islands: goat cheese. It is called queso blanco, white cheese, and is purely eaten, simply cut in slices. The cheese is dry, because it - by hand naturally - is pressed out again and again, until it contains no more liquid. The cheese tastes particularly good also with the small lunch, the Tapas. Tapas are hors-d'oeuvres, which one can arrange in addition, to a full meal. There are special Tapas taverns, which serves goat cheese, olives, with marvellous ham called jamon serrano, in addition to the papas arrugadas with mojo, Calamares in garlic, small fish, pimiento frito, roasted pepper, Tortilla pieces and much more.
